Description

A comforting and hearty soup featuring tender beef and delicate tofu, spiced to perfection for a cozy, delicious meal.


Ingredients

  • 1 lb beef, thinly sliced
  • 1 block firm tofu, cut into cubes
  • 1 head Napa cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 cups beef broth
  • 1 tbsp soy sauce
  • 1 tbsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Greens or cilantro, for garnish

Instructions

  1. In a large pot or Dutch oven, heat some oil over medium-high heat.
  2. Add the beef and cook until browned on all sides.
  3. Add the onion and cook until softened.
  4. Add the garlic and ginger and cook for another minute.
  5. Pour in the beef broth, soy sauce, red pepper flakes, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Add the tofu and Napa cabbage and cook until the cabbage is wilted and the tofu is heated through.
  8. Serve hot, garnished with greens or cilantro.

Notes

For a vegetarian version, swap beef for mushrooms or chickpeas and use vegetable broth.
