A comforting and hearty soup featuring tender beef and delicate tofu, spiced to perfection for a cozy, delicious meal.
Ingredients
- 1 lb beef, thinly sliced
- 1 block firm tofu, cut into cubes
- 1 head Napa cabbage, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 cups beef broth
- 1 tbsp soy sauce
- 1 tbsp red pepper flakes
- 1 tsp salt
- 1/2 tsp black pepper
- Greens or cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat some oil over medium-high heat.
- Add the beef and cook until browned on all sides.
- Add the onion and cook until softened.
- Add the garlic and ginger and cook for another minute.
- Pour in the beef broth, soy sauce, red pepper flakes, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the tofu and Napa cabbage and cook until the cabbage is wilted and the tofu is heated through.
- Serve hot, garnished with greens or cilantro.
Notes
For a vegetarian version, swap beef for mushrooms or chickpeas and use vegetable broth.
