Ingredients

  • For the Chicken Salad:
    • 3 cups cooked chicken, shredded or diced
    • ½ cup mayonnaise (use Duke’s for classic Southern flavor)
    • 2 stalks celery, finely diced
    • 2 tablespoons sweet relish
    • 1 tablespoon Dijon mustard
    • 1 tablespoon fresh lemon juice
    • Salt and pepper to taste
  • Optional Add-Ins:
    • ½ cup halved red or green grapes
    • ¼ cup chopped pecans
    • 2 hard-boiled eggs, chopped
    • Finely diced red onion or green onion
    • A pinch of cayenne pepper or diced jalapeños

Instructions

Prepare the Chicken:

Cook chicken breasts by boiling or baking until fully cooked (165°F internal temperature). Let cool, then shred or dice. (Alternatively, use rotisserie chicken.)

Make the Dressing:

In a large mixing bowl, whisk together mayonnaise, Dijon mustard, sweet relish, and lemon juice. Add salt and pepper to taste.

Assemble the Salad:

Add the chicken, celery, and any optional add-ins to the bowl. Gently mix until all ingredients are evenly coated in the dressing.

Chill:

Cover and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.

Serve:

Notes

For a healthier twist, substitute half the mayonnaise with Greek yogurt.
