Ingredients

1 lb shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 1-inch pieces

8 oz mushrooms (cremini, button, or shiitake), sliced

2 tablespoons cooking oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

1/2 teaspoon black pepper

Salt to taste


Instructions

 

  1. Prepare the vegetables: Wash and trim the asparagus. Slice the mushrooms. Set aside.

  2. Stir-fry aromatics: Heat the cooking oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry until fragrant (about 30 seconds).

  3. Stir-fry vegetables: Add the asparagus and mushrooms to the wok. Stir-fry for 2-3 minutes, until the asparagus is tender-crisp but still bright green.

  4. Add shrimp: Add the shrimp to the wok. Stir-fry for 2-3 minutes, until the shrimp are pink and cooked through. Do not overcook.

  5. Season and finish: Stir in the soy sauce, oyster sauce (if using), sesame oil, and black pepper. Season with salt to taste. Stir-fry for another minute to combine and coat everything in the sauce.

  6. Serve: Serve immediately. This dish is best served hot. It’s delicious on its own or served over rice or noodles.
