8 oz mushrooms (cremini, button, or shiitake), sliced
2 tablespoons cooking oil
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
1/2 teaspoon black pepper
Salt to taste
Instructions
Prepare the vegetables: Wash and trim the asparagus. Slice the mushrooms. Set aside.
Stir-fry aromatics: Heat the cooking oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry until fragrant (about 30 seconds).
Stir-fry vegetables: Add the asparagus and mushrooms to the wok. Stir-fry for 2-3 minutes, until the asparagus is tender-crisp but still bright green.
Add shrimp: Add the shrimp to the wok. Stir-fry for 2-3 minutes, until the shrimp are pink and cooked through. Do not overcook.
Season and finish: Stir in the soy sauce, oyster sauce (if using), sesame oil, and black pepper. Season with salt to taste. Stir-fry for another minute to combine and coat everything in the sauce.
Serve: Serve immediately. This dish is best served hot. It’s delicious on its own or served over rice or noodles.
Notes
Expert Tips: Make sure your wok is hot before adding ingredients. Don’t overcrowd the pan. Feel free to switch up the veggies with bell peppers, snap peas, or broccoli.
Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently.
Variations: Swap the shrimp for chicken or tofu. Use gluten-free soy sauce or tamari for a gluten-free version.
