Ingredients
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup ricotta cheese
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- Sliced almonds for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a large bowl, mix together the almond flour, cocoa powder, sugar, salt, and baking powder.
- In another bowl, whisk together the ricotta cheese, melted coconut oil, eggs, and vanilla extract until smooth.
- Combine the wet and dry ingredients, mixing until just blended. Stir in the dark chocolate chips.
- Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
- Top each brownie bite with sliced almonds.
- Bake for 12-15 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
These brownie bites can be stored at room temperature for up to three days or in the fridge for up to a week. They can also be frozen for longer storage.
