Description
A quick and delicious stir fry featuring tender chicken, vibrant vegetables, and a sweet honey garlic sauce.
Ingredients
- 2 tablespoons canola oil (divided)
- 2 lbs boneless skinless chicken breasts (cut into 1/2-inch cubes)
- Salt and black pepper to taste
- 1 small head broccoli (cut into small florets)
- 1 small red bell pepper (sliced thin)
- 1/2 cup sliced snow peas
- 1/2 cup matchstick carrots
- 1/3 cup honey
- 1/3 cup low-sodium soy sauce (or tamari for gluten-free)
- 5 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes (optional)
- Steamed rice or cauliflower rice for serving
- Sliced green onions for garnish
- Chopped peanuts for garnish
- Extra red pepper flakes for garnish
- Sriracha sauce for serving
Instructions
- Season the cubed chicken with salt and pepper.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the seasoned chicken and cook until mostly cooked through, about 6-7 minutes. Remove the chicken to a bowl and cover to keep warm.
- Add the remaining teaspoon of oil to the same skillet. Add the broccoli and bell pepper and sauté for 5 minutes, stirring occasionally.
- Add the snow peas and matchstick carrots to the pan and sauté for another 5-7 minutes, until the vegetables are tender. You can add 1/4 cup water if needed for cooking.
- To make the sauce, combine honey, soy sauce, minced garlic, and red pepper flakes in a small bowl and whisk well.
- When the vegetables are tender, add the cooked chicken back to the pan and stir well.
- Add the sauce to the pan and mix to coat everything well. Let it cook for 1-2 minutes to heat through and allow the sauce to thicken slightly.
- Serve the stir fry over steamed rice or cauliflower rice with extra sauce drizzled over the top.
Notes
Leftovers store well in an airtight container in the refrigerator for up to 3 days.
