Ingredients
- 1 pound chicken thighs or breasts, diced
- 2 tablespoons fresh ginger, grated
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- Optional garnishes: sesame seeds, chopped scallions
Instructions
Marinate the Chicken:
In a bowl, combine 2 tablespoons soy sauce, 1 tablespoon grated ginger, and 1 minced garlic clove. Add the chicken and toss to coat. Marinate for 15–30 minutes.
Cook the Chicken:
Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat.
Add the marinated chicken and cook for 4–6 minutes, stirring occasionally, until golden brown and fully cooked. Remove and set aside.
Prepare the Sauce:
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and remaining ginger and garlic.
Combine and Simmer:
Return the chicken to the skillet. Pour the sauce over the chicken and stir to coat.
Let the sauce simmer for 2–3 minutes until slightly thickened.
Serve:
Garnish with sesame seeds and scallions. Serve hot over rice, noodles, or steamed vegetables.
Notes
Add a pinch of red pepper flakes for heat.
Stir-fry vegetables like broccoli, bell peppers, or snap peas alongside the chicken for a complete meal.
Refrigerate: Store leftovers in an airtight container for up to 3 days.
Freeze: Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
