These breakfast pizza rolls are a delicious, bite-sized way to start your day! Made with fluffy dough, scrambled eggs, melty cheese, and your favorite fillings, they’re easy to make, freezer-friendly, and perfect for meal prep.
Ingredients
Crescent roll dough, pizza dough, or homemade dough
4 large eggs, scrambled
1 cup shredded cheese (cheddar, mozzarella, or Monterey Jack)
½ cup cooked bacon or sausage, crumbled
½ cup diced bell peppers or spinach (optional)
2 tbsp cream cheese or marinara sauce (optional)
1 tbsp melted butter or egg wash (for brushing)
Instructions
Preheat & Prepare Dough
Preheat oven to 375°F (190°C).
Roll out dough into a rectangle on a floured surface.
Prepare Fillings
Scramble eggs and season with salt & pepper.
Cook bacon or sausage until crispy, then drain excess grease.
Dice vegetables if using.
Assemble the Rolls
Spread sauce or cream cheese (if using) over the dough.
Evenly layer eggs, cheese, bacon/sausage, and veggies.
Roll tightly into a log, then slice into 1–2 inch pieces.
Bake to Perfection
Place rolls on a greased baking sheet, leaving space between them.
Brush with melted butter or egg wash for a golden finish.
Bake for 12–18 minutes, or until golden brown.
Serve & Enjoy!
Let cool slightly before serving. Pair with salsa, marinara, or sour cream!
