Description

A cozy and delightful Crock Pot Tuscan Chicken recipe featuring tender chicken in a creamy, garlicky sauce with sun-dried tomatoes and spinach.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp Italian seasoning
  • 1 (15 oz) can full-fat coconut milk
  • 6 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1/4 cup parmesan cheese, grated
  • Salt & pepper, to taste

Instructions

  1. Place the chicken breasts in the slow cooker and season with salt, pepper, and Italian seasoning.
  2. Add the garlic, coconut milk, and sun-dried tomatoes to the slow cooker.
  3. Cook on low for 360 minutes or on high for 240 minutes, or until the chicken reaches an internal temperature of 165°F.
  4. Once the chicken is fully cooked, remove it from the slow cooker. Stir the spinach and cheese into the sauce in the slow cooker and mix well until the spinach wilts.
  5. Serve the chicken with the sauce poured over the top.

This dish is great for meal prepping and can be stored in an airtight container in the fridge for up to 4 days.
