Description

Ingredients

1 tbsp olive oil

1 lb Italian sausage (mild or spicy)

1 small onion, finely diced

3 garlic cloves, minced

4 cups chicken broth

1 can (14 oz) diced tomatoes, undrained

1 tsp Italian seasoning

½ tsp crushed red pepper flakes (optional)

9 oz refrigerated tortellini (cheese or meat-filled)

1 cup heavy cream

3 cups fresh spinach

Salt and pepper, to taste

Grated Parmesan, for garnish


Instructions

Cook the Sausage

Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into crumbles, and cook until browned, about 5–7 minutes. Remove excess grease if needed.

Sauté Aromatics

Add diced onion to the pot and sauté until softened, about 3–4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.

Simmer the Base

Pour in the chicken broth, diced tomatoes (with juice), Italian seasoning, and red pepper flakes (if using). Stir well, bring to a boil, then reduce the heat and let it simmer for 10 minutes to develop flavors.

Add Tortellini and Cream

Stir in the tortellini and cook according to package instructions, usually 5–7 minutes, until tender. Reduce heat to low and mix in the heavy cream.

Incorporate Spinach

Add fresh spinach, stirring gently until wilted, about 1–2 minutes. Taste and adjust seasoning with salt and pepper.

Serve and Garnish

Ladle the soup into bowls, garnish with grated Parmesan, and serve with crusty bread or garlic knots.

Notes

For a lighter option, substitute heavy cream with half-and-half.
