A comforting and hearty Cowboy Casserole that combines savory flavors and crispy tater tots, perfect for family dinners or potlucks.
Ingredients
- 1 pound ground beef
- 1 (10.75 ounce) can cream of mushroom soup
- 1/2 cup milk
- 1/3 cup sour cream
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups frozen corn
- 1 1/2 cups cheddar cheese (shredded, divided)
- 1/2 cup bacon (cooked and chopped)
- 28 ounces tater tots (frozen)
Instructions
- Preheat the oven to 375 degrees. Spray a 9×13 pan with cooking spray.
- In a skillet, cook the ground beef, breaking it into small pieces, until no longer pink. Drain excess grease.
- In a large bowl, whisk together the cream of mushroom soup, milk, and sour cream until smooth.
- Add the onion powder, salt, and black pepper. Mix until fully combined.
- Using a wooden spoon, stir in the cooked ground beef, corn, ½ cup of cheese, and bacon until everything is well mixed.
- Pour the mixture into the prepared pan. Layer the top with ½ cup cheese and tater tots.
- Bake for 40 minutes, or until it’s bubbly and the tater tots are nicely browned. Then, top with the remaining ½ cup cheese and bake for an additional 5 minutes until melted.
- Serve warm, and optionally sprinkle with extra bacon.
Notes
Use lean ground beef and get creative with substitutions like turkey or black beans. This casserole can be made a day in advance and refrigerated.
