Description

A comforting and hearty Cowboy Casserole that combines savory flavors and crispy tater tots, perfect for family dinners or potlucks.


Ingredients

  • 1 pound ground beef
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1/2 cup milk
  • 1/3 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups frozen corn
  • 1 1/2 cups cheddar cheese (shredded, divided)
  • 1/2 cup bacon (cooked and chopped)
  • 28 ounces tater tots (frozen)

Instructions

  1. Preheat the oven to 375 degrees. Spray a 9×13 pan with cooking spray.
  2. In a skillet, cook the ground beef, breaking it into small pieces, until no longer pink. Drain excess grease.
  3. In a large bowl, whisk together the cream of mushroom soup, milk, and sour cream until smooth.
  4. Add the onion powder, salt, and black pepper. Mix until fully combined.
  5. Using a wooden spoon, stir in the cooked ground beef, corn, ½ cup of cheese, and bacon until everything is well mixed.
  6. Pour the mixture into the prepared pan. Layer the top with ½ cup cheese and tater tots.
  7. Bake for 40 minutes, or until it’s bubbly and the tater tots are nicely browned. Then, top with the remaining ½ cup cheese and bake for an additional 5 minutes until melted.
  8. Serve warm, and optionally sprinkle with extra bacon.

Notes

Use lean ground beef and get creative with substitutions like turkey or black beans. This casserole can be made a day in advance and refrigerated.
