Ingredients

      • 1 ¼ cups chicken broth
      • 1 tablespoon olive oil
    • For the Chicken:
      • 2 boneless, skinless chicken breasts or thighs
      • 1 tablespoon olive oil
      • 1 teaspoon cumin
      • 1 teaspoon paprika
      • ½ teaspoon garlic powder
      • Salt and pepper to taste
    • For the Vegetables and Garnishes:
      • 1 cup diced vegetables (e.g., zucchini, bell peppers, cherry tomatoes)
      • Juice of 1 lemon
      • Optional: fresh parsley, toasted nuts, or dried fruits for garnish

Instructions

Cook the Couscous:

Bring chicken broth to a boil in a saucepan. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

Prepare the Chicken:

Rub chicken with olive oil and season with cumin, paprika, garlic powder, salt, and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side, or until fully cooked. Let rest, then slice or shred.

Assemble the Dish:

In a large bowl, combine the couscous, chicken, and diced vegetables. Drizzle with olive oil and lemon juice, tossing to coat.

Garnish and Serve:

Top with parsley, nuts, or dried fruits as desired. Serve warm or chilled.

Notes

Toast the couscous in olive oil before adding broth for a nutty flavor.
