Description

Deliciously moist carrot cake bars topped with rich cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the granulated sugar, brown sugar, vegetable oil, and eggs until smooth and well blended.
  3. Gradually mix in the grated carrots.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Stir in the chopped nuts and raisins, if desired.
  7. Spread the batter evenly into a greased 9×13-inch pan.
  8. Bake for 30–35 minutes or until a toothpick comes out clean.
  9. Allow the bars to cool completely in the pan.
  10. While they cool, prepare the cream cheese frosting.
  11. In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
  12. Gradually add the powdered sugar and vanilla extract, mixing until perfectly fluffy.
  13. Once the bars are cool, spread the frosting evenly on top.
  14. Cut into squares and enjoy!

Notes

Use freshly grated carrots for best flavor. Store leftovers in an airtight container in the fridge for up to 5 days.
