Description
Deliciously moist carrot cake bars topped with rich cream cheese frosting, perfect for any occasion.
Ingredients
- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the granulated sugar, brown sugar, vegetable oil, and eggs until smooth and well blended.
- Gradually mix in the grated carrots.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Fold the dry ingredients into the wet mixture until just combined.
- Stir in the chopped nuts and raisins, if desired.
- Spread the batter evenly into a greased 9×13-inch pan.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Allow the bars to cool completely in the pan.
- While they cool, prepare the cream cheese frosting.
- In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until perfectly fluffy.
- Once the bars are cool, spread the frosting evenly on top.
- Cut into squares and enjoy!
Notes
Use freshly grated carrots for best flavor. Store leftovers in an airtight container in the fridge for up to 5 days.
