Ingredients
- 1 ½ pounds ground chicken
- 1 cup breadcrumbs (or panko)
- 1 egg, lightly beaten
- 1 small onion, finely chopped
- ½ cup milk
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup ketchup (for topping)
Instructions
Preheat the Oven (if baking immediately): Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, egg, onion, milk, and all seasonings. Mix gently until just combined—avoid overmixing to keep the meatloaf tender.
Shape the Loaf: Shape the mixture into a loaf and place it in the prepared pan.
Add the Topping: Spread ketchup evenly over the top of the loaf.
Freezing Option:
Uncooked: Wrap the loaf tightly in plastic wrap and aluminum foil. Place in a freezer-safe bag and label. Freeze for up to 3 months.
Cooked: Bake the meatloaf for 50 minutes, or until the internal temperature reaches 165°F (74°C). Let it cool completely, then slice and wrap each piece individually. Freeze for up to 3 months.
Bake (if not freezing): Bake for 50 minutes, or until the internal temperature reaches 165°F (74°C). Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Uncooked Loaf: Thaw overnight in the fridge before baking as directed.
Cooked Slices: Reheat in the microwave or oven until heated through.
