Ingredients
- 4 carp steaks or fillets (or any firm white fish)
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 2 green onions, chopped
- 1 red chili, sliced
- 1/4 cup soy sauce
- 2 tablespoons rice wine (or dry sherry)
- 1 tablespoon sugar
- 1 cup water or fish broth
- Optional: a splash of vinegar for tanginess
Instructions
- Pat the carp steaks or fillets dry with paper towels.
- Heat the cooking oil in a large skillet or wok over medium-high heat. Sear the fish on both sides until golden brown, then set aside.
- In the same skillet, add garlic, ginger, and green onions. Stir-fry for a minute until fragrant.
- Add soy sauce, rice wine, sugar, and water (or fish broth) to the skillet. Stir to combine.
- Return the seared fish to the skillet, bring to a simmer, reduce heat to low, and cover. Braise for about 10-15 minutes until cooked through.
- Garnish with sliced red chili, serve hot with rice or noodles.
